A raw pasta delight that will not leave you with that normally heavy pasta belly.
- 2 medium or one large sweet potato (alternative: baby marrow)
- 2Tbs olive oil
- 1/2C (or more!) basil pesto
- 1/2C chopped tomatoes
- 1/4 C chopped olives
- 1/2C chopped rocket leaves
Organic free range chicken breast stripped (cooked)
Use a spiralizer or vegetable peeler to turn the sweet potato into long spaghetti strings. Mix in with the olive oil to soften slightly. Mix in the rest of the ingredients. Your pasta is done.
